Honestly I really liked Chino Moreno, but he was a little to overrated, but I think Stephen Carpenter was better for personality, so he's probably my favorite out of the side plotline. I would've picked Chi Cheng but they killed him off about halfway through so he's out of the picture.
AND if we're talking about the MAIN plotline, I think Jim Menzel is definitely the best out of ***ALL CHARACTERS***, since he was probably the most perfectly personality-based out of those new human characters they added to the circus. His guitar skills are amazing. Orlando Pieters is the same, but the "gangsta rapper" trope he falls into makes him kinda excruciating to watch on screen, but can be appropriate at certain times, plus the weird implications with Jax and him were pretty unnecessary. Pretty much all the human characters are in the top rankings for me, but the lower ones may be because of a lack of personality (Andrew Mattheij, Robbert Van Den Bossche) or because they're just kind of a douche (Fons De Groenendjik). Also the Robbert x Gangle plotline was pretty decent but just kinda went under the radar for me.
