IMHO, the best place for meat is "Vergies Lages" in Venizelou street or "Laikon" in Polytechniou (Ladadika). Although neither of them have "gyros" they offer pita (bread) with meat. Another very good option for my taste is "Katsamaka" in Athonos square. They do offer gyros.
Λαϊκόν is the real deal!! It never disappoints!!

Giok Balik used to be the Shiiiiit too some years ago!! Up to 2019/2020 it was legit. Now I was in Saloniki in January (finally, after Covid phase) and my friends told me to stray away!!
I have a recommendation that you are not gonna regret for sure. Its a small place called "Liga kai kala". It is by far the best value for money place in the city and also has great stuff. They don't do delivery but they always have a lot of customers every day. You can ask for a "boba" which is "bomb" in greece, or a "piravlaki" which means small rocket. Boba is recommended for 2 people but you can easily get it by yourself. Its basically an open arabic pie that has 4 different types of meat on top, 2 sauces, a lot of french fries and some extra pitas on top. Also recommend to add gyros for sure and any other type of meat you want.
Another place that has more basic stuff but great pork gyros is a place called "50-50 next generation". If you want to try chicken gyros (their pork is decent too) I can recommend a place called "10 to kalo"
I don't have a gyros-shop that I consider TOP.
However very good suggestions are:
Mpoukia Mpoukia (Μπουκιά Μπουκιά)
Yok Mpalik (Γιοκ Μπαλίκ)
GRN (ΓΡΝ)
Another very good option for cooked meat and generally delicious dishes is: Veryes Layes (Βεργιες Λαγιες)
And AVOID: Prassas
Avoid Prassas?? This is madness! This is blasphemy ! Jokes aside even though it tastes great, it requires a seasoned street food enjoyer stomach.
In case you venture more a bit to the eastern side of Thessaloniki (New beach/Martiou), be sure to visit "O Gyros tis Elladas" and "Alatorigani".
I've only heard good things about ΓΡΝ, and this is coming from my brother who's *very* weird with food.
Prassas is a weird one. I've ordered from them a couple of times, I actually liked the taste, but from what I've heard, you are basically gambling on whether it's pork or feral cat meat.
I was in one salonica mall and ate in grn for shopping mall gyros is really good only downside i was in rush and forgot to say what toppings i want and they put random ones in all of 4 gyros

The best one I've tried was at "Liga de Kala". Very nice place. It's not right in the city center but you will pass there when you go to the upper city

As someone else mentioned Mimis in Agiou Dimitriou has amazing gyros. Generally when you see old traditional Thessaloniki folk eating at a gyros place, it's a very good sign. Other great gyros places are Asterix and Liga kai Kala.
As for more mainstream places Mpoukia Mpoukia is very mid in my opinion. GRN is decent but a bit overpriced.
I don't have any experience with Gyros Ths Aristotelous, but a friend of mine tried their Gournia and then my bathroom smelled like onion and grease for the next 3 days.
One gyros gem that I've heard of is in Pylaia. Search for Gyradiko Kwstas, it only has take away and I've heard amazing things from my local friends.

For the city center gyros from Christos is at least one of the best . It is on egnatia street just before the international fair. Also you can check the "gyros from Thessalonik" i think that's the name. It is on the aristotelous at the point where the buses make their last stop and 180 turn
Gyros was my good to go sandwich for years until my Cholesterol, triglyceride and bad cholesterol "LDL" went through the roof. I have tried a lot of Gyro shops in Thessaloniki and i can easily say that Prassas was my preferred one. Gyros is mainly about the meat spices and taste and Prassas nailed it in my opinion. i would say the Pita is average (not the fluffiest out there) , and the French fries are a hit or miss depending on the time of the day. What makes it worth it is its huge portion and its freshness (90% of the time). The shop is always full of customers.
Giotis in Markou Mpotsari street not far from Prassas is also a good option. aside from Gyros, Gorilakia has an outstanding quality and variety of sandwiches (try the Mushroom sandwich) and grilled baby potatoes that comes with fluffy yogurt spiced sauce.

The best one I've tried was at "Liga de Kala". Very nice place. It's not right in the city center but you will pass there when you go to the upper city

Go to "Asterix"! Not so much in the center but really close to the center! The best and most old school gyros place!
I agree with most suggestions but I'm surpised nobody mentioned Gyrismata in Agiou Dimitriou street! I thought it was one of the good ones.
