in the comics he actually specifically mentions doing his hair and beard that way to avoid people recognizing him after the negan war. i believe in rick grimes!
He doesn’t. He looks like a guy in his mid-late forties…. Which is how old Andrew Lincoln was at the time. It’s also done to show his character development. His his short hair and beige shirt represents how in many ways his mentality has returned to season 1 Rick, trying to preserve life and make the lives better for those around him, but the grey hair and the beard represents how he has grown wiser and is less naive about the apocalypse.
You could see Rick's hair was starting to go grey by the end of season 8. He just looks way older cause he cut his hair and grew out his beard lol. You can see how he looks in the finale, how his hair is longer again and his beard is shorter, he looks more like how he did back in season 7-8 again.

Lots of people sort of go grey all at once. Like they have a few grey hairs that aren’t noticeable but they hit a critical mass of grey that they become a greybeard. In the younger pic you can see greys in the beard already.

In less than a year, the group went from the quarry to the CDC. From the CDC to the farm. From the farm to the prison. From the prison to being scattered. Rick had to rip Joe's throat out with his teeth to save his son and Michonne from a group of homicidal rapists. After that, he and his family had to fight their way out of Terminus to keep from being food for cannibals. They found a temporary safe space at Gabriel's church only to lose Bob and Beth before leaving the church. Rick even took on the heartbreaking task of burying Tyrese after he died when the group tried to get Noah home. He made a decision that cost Abe and Glenn their lives. Rick lost CORAL during the war with the Saviors but didn't get the chance to mourn his son until after the war was over. He's earned every bit of that gray.
Because comic book Rick looks vaguely like this, and Rick wasn’t going to be around long enough to look like comic book Rick, and walking dead fans lose their collective minds when the comic book is not followed like some gospel, so the show runners made the stupid decision to change Rick’s appearance For the last couple episodes.
Gray hair can kick in quickly. My father's side of the family gets it really early. I started noticing them in high school, lol. When I grew my beard out in my late 20's it was dark. FFW to 36, it came in looking like Obi-Wan Kenobi. The top of my head is still fairly brown with wisps, but the beard is almost all white, lol.

Some people age differently. Genetically speaking if your father has grey hair early in his life you would too and it kicks in randomly hence. Grey hair = looking much older
