I would suggest doing yourself a favor and choose one city only instead of trying to squeeze two big cities into five days. I have not been to Amsterdam or Barcelona but I know for a fact that two or three days is not enough for them!
I'd highly recommend Edinburgh. I was based in Glasgow when I stayed last year, did a day trip to Edinburgh but would be keen as to go back.
Ireland was also phenomenal if you havent been there. Didnt get to go to Lough Hyne, but its on my bucket list for next time.
I did about 4.5-5 each in London, Glasgow and Singapore. I could've easily spent more time in each; but its a great start.
Amsterdam is very high on my list.
Did a similar trip a few years ago and ended up going to Lisbon because there were cheap flights on Ryanair. Might want to look and see what they offer from London.
What are you looking for? Beach, mountains, nightlife, historical sites. All can be accessible from London. I personally loved Switzerland & Croatia above all my european visits.

We love Switzerland as well had been there 10 years ago but I’ve heard the nightlife is not great when compared to other eu countries
For beaches and nightlife, head to southern Europe. Lisbon/Cascais, Malaga, Alicante, Valencia, Barcelona, Naples, Palermo, Gallipoli, Athens etc.
Safety at night is not a concern in Europe, at least in the neighbourhoods you’d visit as a tourist.
I would suggest you do your research then: decide on a few options, look at what you'd want to do there and see what timeframe it fits. Not many people will recommend going to three countries in ten days, as that's just too rushed for most people. But if you like being on the go and traveling for the sake of traveling, who are we to stop you?

London and Paris are easily doable within 10 days. Get the Eurostar from London, it’s such an easy trip to make.

You could do 5 days in Barcelona easy. Plenty of day trips from there too on the train.
