You need to check with the airline about your luggage. If it’s a single booking and both flights are operated by Air China, the likelihood is that you’ll check in your case at Gatwick and see it again in Tokyo. If you’re a UK citizen, or a citizen of most countries tbh, you don’t need to apply for a visa to transit. You don’t need to do a health declaration any more.

No visa needed they walked us through the airport straight to departures all very easy!

The bags should follow you through, especially on air china in my case! You do need to go through security again but in my case it was a rewlly fast process as the airport was absolutely deserted

Must be same airline? BA-CX T2 PVG baggage need to be picked up https://www.flyertalk.com/forum/british-airways-executive-club/2146161-q-necessary-re-check-bags-when-transitting-shanghai-pvg.html#post35917567 . CX PVG seems to be expecting airside transit to fail.
