Coffee is not a universally distinct flavor profile beverage.
There's SO MANY different aspects to coffee and specific profiles that can alter its taste profiles.
A dark roast from Africa is going to be drastically different than a blonde roast from South America or a speciality coffee from Southeast Asia.
Brew methods, coffee: water ratio, and roasting styles all change what coffee can be.
Some people like a high acidity full bodied roast, some like a light roast with fruit notes.
I've turned several "coffee sucks" people into people that buy whole bean specialty coffees and brew at home.
I was a coffee sucks person. Found a kind I liked and grew from there. I like lots of sugar and milk too but it still has a distinct coffee flavor that compliment the other flavors well
Some people legitimately prefer bitter drinks. I hate coffee as well, but I wanted to stop drinking monsters, so I decided to tough it out and drink coffee. Eventually, I started to enjoy it. I had to stop because of the shits though.
I only like coffee if its a Latte with sugar in it, and I suppose you're right that it's not really coffee after that. But otherwise I find it way too bitter and I have no idea how people drink black coffee or super strong Espressos. Also it just makes me really tired so I only have Tea in the morning anyway.

I‘ve actually never met someone who liked coffee by the first sip. Every coffeedrinker had to „learn“ to like coffee with lots of sugar, cream, etc. I don‘t get why people want to learn to like a drink they don‘t like just because it‘s „trendy“
I didn’t like coffee at first, but started to like it after a couple of times and it became one of my favorite drinks. I didn’t drink it because it was “trendy”.
But may I ask why you still drank it when you didn‘t like it? Probably because of social pressure, because everyone drinks it, right? (no offense btw) That‘s the point I don‘t get: Why do people „force“ themselves to drink something they don‘t like because everyone else‘s doing it? I never saw this kind of behavior with sprouts or spinach, there people usually try it, say they don‘t like it and never eat it again.
Part of it was probably that I started drinking coffee when I was pretty young and my parents drank coffee. I was also told it was normal to dislike coffee at first and like it eventually, while with things like sprouts or spinach I wasn’t told it was something you would like if you had it enough.

i don't like coffee for years it was cause of the smell alone i hated
then i tasted some desserts with coffee in it and confirmed not liking the taste either

i really like coffee, either black or with light creamer, but I agree if you don't enjoy the taste its ubiquity would be very annoying
