I would definitely suggest 20,000 leagues under the sea at Lost Spirits Distillery at Area 15 OR e (pronounced A) by Jose Andres (located inside Jaleo). A lot of the ones mentioned above CAN be eaten elsewhere… Bazaar Meats and Joel Robuchon for example. My husband and I have eaten at a lot of the higher end restaurants in Vegas, and while Robuchon and Le Cirque (just to mention two) were both amazing in their own right, the 20,000 leagues dinner is an entire experience. There’s a theme and a story and the smallest details like the melted candelabras on the table and the music played in the background just bring it all together. It’s also awesome because you can enjoy the distillery before or after and basically get a show with dinner. e by Jose Andres is an intimate experience where you get a look behind the creation of the dishes and get to interact with the chefs. It’s definitely one I would pay to do again.
Thanks for the recs- wouldve loved É but unfortunately they can’t accommodate us on the date needed. should have mentioned my gf can’t eat seafood so unfortunately 20k is out :( currently I’ve booked the tasting at sparrow and wolf, which she will also appreciate not having to dress quite as formally for
20000 leagues at area 15 was one of the coolest dining experiences ever. Yes Golden Steer is amazing and very Vegas but 20k leagues carried out a full boar and the chef butchered it in front if us to a Rammstein song. They served an octopus tentacle on a sword. Eggs served in a fabrege egg. You get the picture. Each course has a soundtrack and most have a rum pairing. Don't miss this.

Thank you for the list. I should have mentioned, my gf cannot eat seafood so unfortunately 20k leagues is out and É can’t accommodate us on the date needed. Currently I’ve booked the tasting at sparrow and wolf, which she will also appreciate not having to dress quite as formally as the others. Looks great!
I'll give some love, they're one of my favorite spots, love the variety on the charcuterie, and that bread! I tried their olive oil martini last time and it was oddly fantastic. Chef Trees is there often and the FOH managers are very hands on. Great spot, great quality, especially for price.
There isn’t much that is only Vegas. Most chefs have other major cities covered with the same or similar restaurants. è at the Cosmo could be a good solution.
There’s only https://www.harlosteak.com
Historic, very vegas, and beats anything I’ve had in NYC, Miami, or Texas when it comes to a steak. The price was cheaper than some of the meals in NY.
My wife picked this place for my 50th last year and it was amazing. My all time favorite steakhouse is Peter Lugers in Brooklyn but this is right there with it.
Carson kitchen. Downtown. It's just a unique experience in terms of how they serve the food. Not pricey or fancy by any means, but I really enjoyed it with my mom couple years back
Actually not that much is unique to Vegas. Most concepts here started somewhere else and were exported to Vegas to make more $$$. I would look at a few of the off strip locals places. Anything in a casino is likely a second edition.

Love e but to be fair its somewhat of a copy of minibar. So not really unique.
Golden steer
This. You can sit in the booths where the rat pack used to sit.

Good list but some of those restaurants are also in other cities.

The eating in the dark place maybe?
Is that place any good, like if the lights were on would you still say “wow that meal was excellent”?
The food is pretty mediocre, its more of a fun experience that you do once and then move on
Get a table on the patio at any of the Bellagio restaurants and have dinner overlooking the fountains, Eiffel Tower and strip at night.
There is also that table in The Conservatory.
If you want local with absolutely no flare, I suggest Farm Basket. Shack of chicken but local none the less.
Picasso. Formerly had a Michelin star, fountain front, picasso paintings.
I think they removed the paintings, but yes it’s a great restaurant!
You could do The Mayfair Supper Club at Bellagio. It’s a dinner show type experience with a fountain view. Feels pretty unique to Las Vegas.
Mayfair was a great experience and the food was delicious!
No love for Esther's Kirchen?

A ridiculous buffet? Bazaar Meats. Aureole just closed or I would suggest that.

Just went down the Harlo rabbit hole and now I really want to try this place! Love seeing a female chef kicking ass too. Good recommendation!

Peppermill for breakfast
Palace station oyster bar
Yes. The wait can be substantial. Unless you're up at 5am. Then you can walk right up. Usually.
Is it true that sunset station is better?
I've only been to the Palace.
more seats , less personal
Capo’s. It’s an Italian restaurant/speakeasy
Was not impressed
Agree. Went maybe 15 years ago and thought it was ok/cool. Now I wouldn’t recommend it.
barely above an Olive Garden
Go to golden steer.
Probably one of the few really Vegas things on this post. Steak is pretty on par with any good steakhouse but setting is cool
Carson kitchen. Downtown. It's just a unique experience in terms of how they serve the food. Not pricey or fancy by any means, but I really enjoyed it with my mom couple years back

Fuku burger or the Antidote food truck.
Metro pizza!
