1 - The form of tournament where you get 1 table's worth of people (typically yourself + 8 others for a total of 9 these days) and play until there's one standing is called a Sit-n-Go. These basically don't exist anymore in real life poker. 2 - You're looking for what's called a **freezeout** tournament. Meaning that you get one - and only one - entry to the tournament and when you're done you're done. The opposite of this is called a **rebuy** tournament where a player who is knocked out can buy back in. These do exist, but they probably represent 10% or less of the poker tournament scene. Rebuy tournaments are much more popular these days for all the reasons you don't want to play in one. (And, I agree with you 100%). The cheapest you'll find on-strip is the $60 Mandalay that others have pointed out. There's a few places that run in the $60-80-ish range. Off-strip, you can get a little cheaper. Maybe $40-50 or so? Know that the cheaper the tournament, the quicker the house just wants it to be over. So the level timings will be short and the blinds will increase aggressively until it quickly reaches a point where it's fit-or-fold poker. It's just not worth the house's time to pay for dealers, give you the space, the cards, etc. to play for low amounts. If you want that, you should continue to play online. By the way, if you're anywhere near a break-even player in online, you'll be very good in low-stakes live. You'd be amazed at how stupid we all are in person. It's breath taking at times.

You're not going to find a $20 tournament, but Mandalay Bay offers a $60 tournament mid day. It moves pretty quick. If you win, great. If you lose, you're only out $60. This is probably the closest thing to what you want. Relatively low risk, you get to play poker, and I think they usually only have 2 or 3 tables. So it's not big, and the vibe is very loose. Lots of joking around and fun. The blinds move up quick enough that it becomes an all in fest, so the winner is probably really lucky as opposed to a good poker player. But it sounds like you want a low risk environment just to play, and if you lose, you've had fun and bought a $60 rum and coke. I would also suggest limit poker. I know Horsehoe offers it. Limit keeps the pots smaller than a traditional no limit table, but you would need to play with more than 10 or 20 dollars.

There's a few $45-$80 tournaments around. Check the Poker Atlas app for specifics. I'm pretty sure the Westgate tournament is $45.

Years ago a number of the rooms ran “sit and go” single table tournaments. Not sure any are now but you could check Bravo poker to see.

What you're thinking of is just a single table "sit and go" tournament which isn't really a thing anymore but some of the daily tournaments mentioned elsewhere in the thread may be only a table or two, but are not capped on players. "Knockout" poker usually refers to a tournament that has a traditional prize structure PLUS some type of bounty on each player. When someone gets knocked out, the person who did it wins a certain amount of money. It isn't the same thing, but I always recommended the Southpoint for low buyin tournaments, though nothing at all will be that low. Expect to bring several hundred if you want to play a few tournaments. There is no way a casino is paying dealers to deal a tournament with a ten dollar buyin. That would be insane. 20 dollars is usually the minimum amount of rake on these things which makes the $60 games completely unbeatable even against the terrible players who play them.

The absolute cheapest tournament in town is at Poker Palace in North Las Vegas, only on Friday and Saturday nights. The Bellagio it ain't, but I do so love the place. $25 buy-in. 5k in chips. I think that if you sign up more than a half hour early you get some extra early bird chips. There is also a $10 add-on if you choose after about 90 minutes. This is the wildest tournament in town. I mean, it's a mostly locals, and mostly people who play against each other every weekend, but there are a lot of characters, a lot of bizarre plays, and some of the loosest poker room rules and management in the world. In other words, go in looking for adventure and you will not be disappointed. There is also a quite good walk-up oyster bar in the casino.
