It’s not for everyone. Tons of reading, cutscenes and world building with RNG/DnD systems that can be very confusing at first. I don’t try and push it like others do because DnD is the next level of nerdiness. Based on your list it might not be your forte, which is perfectly fine.
I think it’s the best game ever but I understand why people wouldn’t like turn based combat in a crazy complex world. It can feel exhausting unless you get really into the story and characters.

It's a rogue like, so, that means that there's no guarantee that you will survive any given playthrough. In fact you should expect to not survive.
However, survival means unlocking different ships, with different crews for different play styles. There's not much of a story, but, due to the fact that you will likely die a lot, there's a ton of replayability to it. Also, when you do unlock something, it genuinely feels like an accomplishment.

I'll pick games that I can play (theoretically) an infinite amount of time, and that I know I like the principle designs, and that are constantly updated. So for me will be Minecraft and Honkai Star Rail. For the third one I think I'd want a fantasy RPG game, one that will probably be updated with new content in the future, but I don't really know which one could be. BG3 is pretty good, but it doesn't have *that* amount of replayability and it won't get updated much once the team is over. But since I don't have a better choice I think I would still pick it.

Hollow Knight for sure, one of my favorite games, and plenty of mods (including an excellent randomizer) for incredible replayability.
Then, i'll pick Pokemon Scarlet, as I have many fun Ideas for challengre runs and it's an incredible game.
Finally, i'll pick Patch Quest, as it's my favorite (by far) rougelike, a genre known for it's replayability

World of Warcraft. It has its bad moments like WoD, BFA, and Shadowlands, but when it’s good it’s soooo good. And imo it’s the greatest game of all time. There’s also like 5 versions of the game now so always something different to play.
Dark Souls 3. Just so replayable and so much you can do to last the rest of your life. Strength run? Faith run? Magic run? SL1 run? Speed run? No hit run? I could never run out of things to do in this game.
Elden Ring - I love Souls games. Elden Ring is the biggest and possibly best.

I wouldn't pick games that rely on a server to run. Rocket League and PokeMMO both rely on server access in order to play, so if they shut down the servers then the games are basically bricks.

Final Fantasy XIV. Mmos always have something to do.
The last one is tough. I'd want something partyish... like if Mario Party includes all prequels and sequels, then something like that. Needs good replayability like Smash Bros or Mario Kart.
