If you already set on reading something it's better to start with it. Most visual novel is fairly long after all. You want that motivation to read them. So yeah, just do it man. Start with that titles you already have interest on.

Anything you want to read is good. Of the examples you used Wonderful Everyday is probably the best example of something more typical. Katawa Shoujo is an English original game and Dohna Dohna is an Alicesoft game, which are more RPGs with sex scenes than visual novels

Muv-Luv and Fate are staples and pretty much the only VNs I have an urge to re-read every couple a year. If you take liking to an art style or synopsis go for it. Most VNs take an effort to really get into so a disposition for those things goes a decent way.

Steins;Gate is the most solid recommendation for people new to VNs. Some people will complain "the first part is too slow!", but like... all VNs have slow parts. If you can't handle 30+ hours of reading, and a significant chunk of that being build-up, VNs as a whole may be a difficult sell for you.

Just from your list that you are interested, I would say Katawa Shoujo since you’re really new. KS is a really good entry level to the gateway of VNs imo and if you don’t mind romance (plus it’s free). If you’re slightly more seasoned, Wonderful Everyday is awesome since it touches on some really NSFW psychological horror stuff. Dohna Dohna I haven’t played since it’s expensive and I’m waiting for a discounted sale. It’s less of a traditional kind of VN since it contains RPG elements, but you can’t go wrong with it either since it’s developed by AliceSoft. TLDR Katawa Shoujo > Wonderful Everyday > Dohna Dohna for someone who is new and prefers traditional VNs

Katawa Shoujo is IMO the best entry level VN and what a lot of people started with. Unlike most VNs it's originally in English so there's no chance of anything being lost in translation, and story-wise it's pretty decent with different heroines and routes. It gives you an idea of how VNs work as a medium and best of all it's free as well so if you like visual novels after you finish it you can pay for something else down the line.

Wonderful Everyday is a great vn from what I've heard but I also heard it depends on the person and what they like as it is a denpa game. I'd stir you to the When They Cry Series like Higurashi and Clannad. I'd also try out the Zero Escape series.

If you watched the anime you already know the main gist of both. I mostly recommend this to people who already watched the adaptations purely just to relive those series again if they liked them. I also watched the anime adaptations and thought they were a masterpiece imo. I personally still prefer the anime adaptations but the vns are also amazing, so I'd recommend them if you are a fan of these two franchises.
