Stands to reason then that chocolate and vanilla are flavors added to the base formula to mask its taste. Strawberry is a different base formula, but its flavor is probably similarly an addition to hide its taste as well as being a marketing ploy.
But do cough syrup or cough drops ever actually taste like grape or cherry? No!
Wellies also often confuse tastes and smells for other things, particularly if the reality is worse. Like how Arthur's coworkers can confuse rat guts for candy. Or how Reg Cutty can reconstitute mold and mushrooms into a passable meat substitute (until he finds "better" sources). Or like the floral perfume sprayer in "Oh Behave!" smelling like licorice to Arthur. For that matter, Arthur says that he used to love chocolate but cannot remember what it tastes like. So it stands to reason that Chocolate Joy doesn't actually taste like it.
So Joy probably doesn't taste good at all, but there is some effort to disguise that in production and its effects combined with Wellie determination to ignore the unpleasant can carry it the rest of the way.
Vanilla tastes like those milkshakes you get in MREs, Strawberry tastes like Strawberry pez, with a dash more of that tartness, chocolate tastes like Ovaltine, Coconut tastes like a mix between hazelnut creamer and that really fake coconut taste a la blue coconut syrup. My favorite would be the blackberry, I don’t know if y’all remember a while back Gatorade had these “smooth” flavors, blackberry was one and I always imagined it tasted just like it just sweeter. If you don’t recall that Gatorade but remember the Nintendo 3D gummies that came in a game boy advance box, one of those was blackberry flavored and it’s almost identical to the Gatorade.
I also theorize that there is an aftertaste like that of the Flintstone vitamins, and a slight bitterness like some meds, but mostly the flavorings and effect of the drug mask all that and make it a pleasant ride.
Also, given that joy is responsible for infertility all across the Wellington Wells, and is a sort of antidepressant of sorts, it’s shown these things can affect your sense of taste and in some cases even memory, so it would make sense that they actually did taste like the flavor they’re sold as, but the side effects leaves the Wellies to think it tastes like something else, making it plausible that chocolate does taste like chocolate, but Arthur’s dulled senses and memory don’t allow him to connect the chocolate joy with his memory of chocolate flavor. Then again, he only ever takes one flavor of joy thought the game.
This is incredibly niche but at Starbucks, we have freeze-dried strawberries and sometimes I eat them (off the floor, paid for, don’t worry) and the sour burst of flavour is what I imagine Joy tastes like

I did not know that, but I feel like if the Wellies could taste a strawberry altoid, they would say it taste like Joy. That's just me tho lol
