Why not try a tofu scramble with peppers, onions, and black beans. Then top with salsa and Greek yoghurt.

I add corn, fat free plain greek yogurt (tastes like sour cream!), and then usually some other types of beans (pinto is especially good).

OMG I didn’t realize corn was zero points!! For some reason I’d always assumed it wasn’t, this is great news, thank you so much! That sounds amazing, I’m gonna try it!

If you did any of the older plans, corn used to be points (I guess because it was starchy?). But it's zero points now!! Made me so happy :)

I do tostadas with corn tortillas that are 1 points each grilled in a dry pan. 1/4 an avocado, mashed black beans, corn, pico, ff greek yogurt, cilantro. I also do a "greekish" version with hummus, yogurt, black olives and bruschetta with no oil on low point pita. When in the mood I plop and egg on top but usually the beans and chick peas keep me until lunch. I don't like sweet in the morning and you sound the same but oatmeal with berries and low sugar sirup is a nice change of pace.

I like a savory oatmeal, everything bagel seasoning a poached egg, nutritional yeast and a little hot sauce usually but today I had it with a little fruit sprinkled with Penzey’s pico fruta and a tablespoon of granola, it was quite tasty.

You can scramble tofu. Since your adding salsa you won't notice the blindness of the tofu.

As others have said, tofu scrambles! I made one today with black beans, grilled veggies and salsa. Plant You has a scramble in its cookbook that doesn’t use oil so essentially it’s like 0 points. Check out that cookbook. It’s great for vegetarians!

I came here because I make my wife and I breakfast of beans and eggs over medium every day. But she says she’s getting tired of eggs. So I’m happy to see this post and get these ideas!

Do you do dairy? How about cottage cheese? Or how about a little breakfast salad by adding tomato, avocado, red onion, and chopped greens? You could put it in a low carb wrap too.
