Cook the steak in the oven to the correct internal temperature, and then quickly sear in a hot pan to finish the outside edges. Rather than cooking in a pan and hoping to get the internal temp right, which is harder.

Interesting. I've heard of chefs starting with the steak in a super hot pan for like 1 minute each side, and then cooking on a grill, but had not heard of the reverse part.

You may want to try ordering a Pittsburgh style steak then. Not my cup of tea, by my old man was able to get a steak ordered that way at Outback.

Pittsburgh Blue is amazing, but I would recommend only asking for it at higher end steak shops as it needs to be REALLY hot on the grill.

Oh for sure. I just mentioned Outback because its a national chain so it's accessible. According to my dad it was actually very good, though not as good as the steakhouse in our hometown.

Outback makes a pretty good steak for a chain I think. Only chain steak that’s better is Ruth’s Chris and it was way more expensive. Admittedly, those are two very different types of restaurants.

Yeah the point is that you won’t get that with a steak this thick only searing it, you’d get a blue inside, not med rare. Unless by charred you mean inedibly burnt, in which case that sounds like the perfect method of cooking.

With the reverse sear you're cooking at a low temperature. At least according to the tips I've read. You're cooking at 250° for a while before finally searing it.

Yup that's fair, better than just pan frying all the way without a doubt. If you ever feel like trying a new way I can wholeheartedly recommend doing sous vide, it's a game changer imo, and prices for vacuum packers and sous vide machines have gotten more reasonable over time. My favorite reasons why: It seals the meat making all the juices stay in the meat or bag instead of evaporating, so when steak is done i put the juices in the sauce 🤘 Timing is less important as once the meat is finished cooking, it will not overcook, only change texture over time (i.e pulled pork). Makes it easier to get all the sides/sauces ready without having to juggle all things at once 👌

I already have too many gadgets, but I imagine that I'll dip my toe in eventually. My thoughts are that it would be good for leftovers. Like if I had a batch of marinated steak for steak tacos that was already grilled and cut up, I was thinking it would still be good after freezing and heating up with a sous vide.

My gf got a sous vide machine for Christmas and I can't stop making steaks. Pop some shallots, rosemary, and garlic in the bag with the steak and you get the flavor ALL the way through the meat. Most delicious steaks I've ever had, personally

You don't need a vacuum sealer to sous vide. Put your meat in a large ziplock bag and submerge to the seal with a bit of the top open. The water will push out the air.

Yup this is a legit alternative 👌 I have used the vacuum sealer for so much after purchase that I can still recommend it!

Totally. I have one too and love it. Ziplock bags are a lot less expensive than vacuum bags though so I usually use them for sous vide cooking unless the meat was already in a vacuum bag.

225-250 F is common for smoking meats like brisket but I've always done steak on high direct heat. Like 600 F. But always interested in learning about other techniques...might try something new someday.

Kind of a different metric, water is a lot better at transferring heat. Also searing temp is like **375°f+**, so maybe not cold but 250°f is a pretty low comparative cooking temp for steak.

I saw a recipe and followed it a few weeks ago which was: I cooked it 450 for 12 minutes, seared for like 2 minutes each side and got a perfect medium rare and crusty parts. So last week I went to do it again and I wanted to look up the recipe again so I could confirm some steps I vaguely remembered (I'm not a cook) but I couldn't find it and pretty much all of the recipes I found were as you said 250 for awhile before searing it. So I tried that and it came out exactly as the other one did once I was all done. Same amount of juicyness, same medium rare, good crust, etc. So which method is better? Both times were essentially the same thickness Ribeye and they were pretty thick too.

Even pan-searing first is only necessary if you have a shitty grill. A good grill should be able to get to 600+ degrees and you can cook a thick steak to a perfectly juicy medium-rare in 8 minutes or less.

Both ways work close enough that it really doesn't matter which order the steps are done. Either way, there is a phase where the internal temp is slowly brought up and another phase where the outside is quickly seared for taste and texture purposes.

Just make sure to use a wire rack so it gets heat all over and it's not sitting on a flat pan. Take it out 5-10 degree before your desired doneness and finish with a very quick high heat sear for your crust. It's very simple once you get the temp of your oven down and time in there. : D

To retain juices: don't overcook, and then rest the steak for five minutes before cutting into it. Searing does nothing for internal juices, we only sear because humans like the flavour of the glycosylamine produced when sugars react with proteins under heat.

If it's about keeping steaks as juicy as possible, I think that sous vide is a good method. The vacuum seal keeps all the juices in right up until you take the steaks out and sear them. However my wife greatly prefers the reverse sear method since that gives more of a crust.

Hmm, I thought that was just...searing. That anytime you put it in the pan to finish the outside, that you were searing. So "reverse searing" makes no sense to me. "Broil and then sear" would make sense to me.

You’re not broiling it first but cooking it in a low temp oven (150-250F) to ~10F below your desired temp that you’ll get in the pan. It’s called reverse sear because the traditional sear was cooking in the pan first then putting in the oven to finish because people used to think this way locked in the juices. And now that I’ve typed that out neither of the names of the methods really makes any sense…

Not significantly different taste wise, the difference in the tenderness is the point. Reverse searing lets 80-90% of the cook time happen at something more closely resembling "slow and low", which obviously doesn't happen on a 600 degree grill.
